At our eight-seat restaurant, you will experience Japanese craftsmanship, but authentically Yama.
I present my life’s work in a single, storytelling omakase menu.
My life is devoted to Kaizen (改善), the relentless pursuit of improvement, and Shūjuku (習熟), the discipline of mastery, the path of the Shokunin (職人).
Guided by Mottainai (もったいない), every ingredient is honored in its entirety.
Each dish reflects years of precision, dedication, and respect for both the Netherlands and Japan.
