At the heart of his home, around the fire and an intimate 8-seat chef’s table, Chef Yama offers his personal interpretation of the Japanese omakase tradition.
Dutch seasons and ingredients form the foundation of his omakase, where Japanese tradition and technique meet a contemporary perspective. Open fire plays an important role, with techniques such as grilling over binchotan on the konro, smoking in the kamado, and warayaki.
The result is an omakase distinctly his own, rooted in the classical techniques, discipline, and values of Japanese cuisine, yet shaped by Yama’s life and experiences in Europe.
