Chef Yama presents a broad spectrum of Japanese techniques, from refined sushi to preparations where fire takes center stage.
We work with the finest Japanese ingredients and, whenever possible, with locally sourced Dutch produce, respecting the land, the seasons, and both Japanese and Dutch culture.
Guided by the Japanese principle of mottainai, we honor every ingredient.
